Chicken kale

One of my friends, M, told me this week that she’s been doing only whole, real foods and organic when possible, no processed food at all. She looked fit and glowing.

This is how I eat when I’m honoring my body and in my groove. The above pic is seasoned grilled chicken with fresh kale sauteed in extra virgin olive oil with lots of garlic and sometimes onions and a squeeze of lemon. Yum!

I’m into kale right now, but spinach or broccoli would be just as good.  Alive food keeps you alive, baby.

I make this super fast, I buy the kale bagged and washed already and just throw it in the pan with the oil and garlic on medium heat and toss until it’s emerald green. The chicken breast I buy precooked and heat it. Salt to taste, ponzu sauce or soy sauce and sesame oil rocks this, too.

In five minutes, the time it takes to cook a frozen meal or get fast food, your super healthy lunch is done!

I also make these turkey or chicken burgers inspired by my friend Allison, mine have chopped garlic, celery, mushrooms, onions and herbs in them.

Fresh mint is good and so is cilantro if you like it, I love fresh basil. The veggies make the burgers bigger, lower calorie, higher fiber and higher nutrition. The celery seems to make them more juicy, chop it super fine if you don’t want to taste it.

Allison took me out to these stores in the Valley where you can buy loads of fresh herbs for so cheap, I couldn’t believe it. A giant bunch of fresh mint was fifty cents! This is a kosher store where a pound of ground chicken was $1.99.

So I’m trying to eat this way and get that glow that Gwyneth Paltrow supposedly gets from kale poop- ha! I’m really so much happier when I’m nourishing my body.

Off to take a walk outside, then take pictures of Bexon at his Spring Camp fair and hope to catch a glimpse of the Easter Bunny. Next to the doctor to see how crazy she thinks I am. Later to a 12 Step Meeting to control my deadly disease.

    That is my kind of meal. The only processed food in my home is hazelnut creamer.

    I LOVE kale. I buy bone in fryer breasts from a local farmer. Cheap, and free range. I am blessed to have a year round farmer’s market very close so it’s easy to eat seasonal and local. My Mexican neighborhood is great for cheap seasonings. I pay a fraction of the cost for my star anise, saffron, and other things that most people pay a ton of money for.

    Eating that way is definitely where it’s at. You can consume a few more calories and still lose. Your body doesn’t process all that chemical stuff very well, which is why “lite, diet, and fat free” foods aren’t generally the route to take.

      I have such west-coast envy right now! Our farmer’s market doesn’t start for a couple of months but we do have a delightful organic foods market in town that I drive past far too frequently to make excuses. Heidi, thank you for the pictures because seeing what a normal woman (not that normal is bad!) can throw together is much more inviting than those beautiful professional chef photos in most cookbooks. Hmmm, or are you secretly a chef?

      Also, Deb, kale chips!? Explain please!
