I want y’all to see that I’m not just paying lip service to my kale obsession. Oh, no, tonight I made KALE NACHOS! I think I created it and if I didn’t don’t tell me.
I made the kale chips just like normal (cookie sheet covered in parchment paper, preheat oven to 350 degrees, spread leafy parts of clean dry fresh kale thinly on paper, spray with olive oil spray or drizzle with extra virgin olive oil, salt or garlic salt to taste, cook 10 minutes ’til crispy…)
Here’s the new part: I added a heavy sprinkle of cheddar cheese and then put the pan back in for 5 minutes for it to melt. OMG! I poured the whole thing on to a plate and ate it as an appetizer. Sooooo good and about 150-160 calories for the whole thing!
That photo above is my actual nachos just before I melted the cheese. Once it was melted I couldn’t be bothered to take photos. Would be good dipped in ranch dressing, too.
If you’ve been eating unhealthy, don’t worry, I’ve had a love affair with pasta and pizza this week! Ya gottta live a little. I’m chub-a-riffic.
It just occurred to me to add avocado, chopped tomatoes, black olives, sour cream, salsa, picante sauce…whatever you like and eat it with a knife and fork. Yum!

i JUST read about kale chips on pinterest. okay. you have convinced me. i am trying this stat. love the idea of adding other nacho-y stuff – salsa, avocado. yummy.

OMG! I made sauteed kale last night with TONS TONS and TONS of garlic! The whole family luved it! Have enough Kale leftover to try the Kale chips tonight! Thank you!
