Hey! I’ve been busy and had less time in the mornings lately to eat breakfast, but I need to eat, I’m hypoglycemic and I get mucho crabby without my coffee and some form of protein to start my day.
If you don’t already know how to do this, it’s a super quick and easy breakfast that only takes two minutes (holla!) with almost no clean up, because you don’t dirty a pan.
First, you take a microwave safe bowl or very large coffee mug and coat the inside lightly with oil or butter. I use olive oil spray and it works great, only adding about 20 calories or less.
Then I crack three eggs and use the whites only- so three egg whites. You can also use the yolks and scramble it, then I would use two whole eggs and add a little milk before scrambling, and cheese mixed in, if you like.
I do eat yolks and they’re full of nutrition, I just prefer the whites only with this method. You can also use Egg Beaters or another brand that’s similar.
So just oil the bowl or mug, add the eggs, then microwave on regular (high) for 1 minute 15 seconds to one minute 30 seconds.
The timing is depending on the strength of your microwave power, mine takes one minute 15. If you’re using a bowl, you don’t even have to stir the eggs, but with a mug, you should stir the eggs halfway through cooking to make sure they heat evenly.
Be careful because the bowl or mug will be hot. After the eggs are cooked through, add any toppings you like.
I like a medallion of soft goat cheese with salt and pepper or a smoky seasoning with salt. When I add the cheese, I cook it for an additional 20 seconds to warm or melt it on top of the eggs, after they’re fully cooked.

Other options include any other kind of cheese, I like 2% shredded cheddar with a preheated sausage patty on top (either regular breakfast sausage or soy/vegetarian sausage, which heats in the microwave in 30 seconds.)
I also love cheddar with salsa and diced avocado or a medallion of warm brie cheese if I’m feeling French and fancy. Yum!
You don’t have to wash a pan, just stick the bowl in the dishwasher, and I’m not advocating eating while driving, but it’s easy to take this meal in the car on the go.
Calories: 17 calories in one large egg white. I round it up to 20 and add 20 for oil, that’s 80. If I add a 70 calorie goat cheese medallion, that’s only 150 calories or 3 Weight Watchers points for breakfast! Have some fruit with that, if ya feel like it.
The veggie sausage patty adds 70 calories, still keeping it well under 250 for the Happy Sunshine cheddar sausage egg bowl, more like 220-230 calories and 5 Weight Watchers points.
The salsa is almost a diet freebie, 10 calories a tablespoon, and I used about three small slices of fresh avocado, only adding 50 calories for that. The “Tex Mex” eggs came to about 220 calories and 4 Weight Watchers points.
